The weather here continues hot, although tonight it was slightly rainy, and also windy and almost - dare I say it? - cool. Nah, not cool. Warm, maybe. The rain will be a relief, though; it hasn't rained once since the rainy season ceased two weeks ago. I am sporting three very large, very itchy, very ferocious mosquito bites on my legs, and they're driving me nuts, but my pride so far is not allowing me to go buy anti-itch lotion. I can take it.
Bring it on, Japan. Really, though, I shouldn't say that, considering the track record my health has.
Before I forget!
The other day, I made vastly improved pancakes using a tweaked recipe from GFMommy. The original recipe is
here. Since I don't have cornmeal, I mixed half corn flour and half corn grits to substitute; I used brown sugar instead of white, didn't add water, and did the ol' lemon-juice-in-milk trick to substitute for the buttermilk. The pancakes turned out looking like this:

They actually tasted like real pancakes, too. Although next time I'm going to cut down on the amount of oil; I could probably use half the amount.
Tonight, I made some sort of... thing. Stuffed peppers, one might call them? Anyway, I took peppers and hollowed them out, thusly:

Then, I took some meat that had been lingering in my freezer - cut bacon-style, but not smoked, and therefore not tasty on its own - and dumped spice flavouring from the grocery store all over it, then rolled it up with a piece of un-cheese in the middle:

Then, I wrapped the whole thing up in tinfoil and stuck it in my (preheated) toaster oven for just about 15 minutes.

So good, and so good for you. Also gluten-free. Right now I've got a cinnamon quickbread on the go in the rice cooker; I shall refrain from posting the recipe in case it turns out disastrously, but if not, stay tuned for pictures!
